Award-Winning Oak Smoked Irish Organic Salmon

Warm new potato and smoked salmon salad

A late-spring lunch dish that works equally well as a starter. The potatoes go in while they’re still warm, which lets the wholegrain mustard dressing soak in, and the salmon goes on at the end. We use Jersey Royals when they’re in season, Charlottes the rest of the year. A soft-boiled egg sliced over the top turns it into a meal you actually feel full from.

Ingredients

  • 600g new potatoes (Jersey Royals if in season), washed
  • 200g WOH sliced smoked salmon, torn into pieces
  • 4 large free-range eggs
  • 100g watercress, tough stems removed
  • 1 small red onion, very finely sliced
  • 2 tbsp wholegrain mustard
  • 4 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 small bunch fresh chives, snipped
  • Sea salt, freshly ground black pepper

Method

  1. Bring a pan of well-salted water to the boil. Tip in the potatoes whole and cook for 15 to 18 minutes until a knife slides through easily. Drain.

  2. While the potatoes cook, soft-boil the eggs. Lower them into a separate pan of simmering water for exactly 7 minutes. Plunge into cold water, then peel and quarter.

  3. In a large bowl, whisk the mustard, olive oil, and vinegar together. Season with salt and pepper.

  4. Halve the potatoes while they're still warm and tip them straight into the dressing. Toss to coat. They will absorb the dressing as they cool slightly.

  5. Fold in the red onion. Pile the watercress over the top. Drape the salmon across, then settle the egg quarters around the edge.

  6. Scatter the chives. A final crack of pepper.

Tips from our kitchen

  • The potatoes have to be warm when they go into the dressing. That's where the flavour lifts. Cold potatoes don't drink it in.
  • A 7-minute egg is the sweet spot. Yolk just set on the outside, soft in the middle.
  • Don't pre-mix everything. Build the salad in the bowl you're serving from.
