Award-Winning Oak Smoked Irish Organic Salmon

Smoked salmon gnocchi bake

The autumn-Wednesday-night dish. One ovenproof pan, no pre-boiling of gnocchi, no separate sauce. Everything goes in together and the oven does the heavy lifting. You finish with a crisp panko crust over a soft, creamy underneath. Smoked salmon trimmings cost a fraction of sliced and disappear into the sauce just as well. Twenty-five minutes start to finish.

Ingredients

  • 500g shop-bought gnocchi (the chilled fresh kind)
  • 250g WOH smoked salmon trimmings
  • 200g full-fat crème fraîche
  • 100ml double cream
  • 2 leeks, white and pale green parts only, sliced into rings
  • 2 garlic cloves, finely grated
  • 100g baby spinach
  • 50g parmesan, finely grated
  • 30g panko breadcrumbs
  • 1 unwaxed lemon, zested
  • 1 small bunch fresh dill, chopped
  • 30g unsalted butter
  • Freshly ground black pepper

Method

  1. Heat the oven to 200°C fan.

  2. In a wide ovenproof pan, melt the butter over a medium heat. Soften the leeks for 5 minutes. Add the garlic for the last 30 seconds.

  3. Tip in the gnocchi straight from the packet. Stir to coat in the buttery leeks.

  4. Add the crème fraîche, double cream, lemon zest, and spinach. Stir until the spinach wilts down, around 2 minutes. The sauce should look loose, almost too loose. It tightens in the oven.

  5. Take the pan off the heat. Fold in the smoked salmon trimmings.

  6. Scatter the parmesan and panko evenly over the top. Black pepper.

  7. Slide the pan into the oven for 15 to 18 minutes until the top is deep gold and the sauce is bubbling around the edges.

  8. Scatter the dill over the top. Let it sit for 2 minutes before serving. The sauce wants to settle.

Tips from our kitchen

  • Do not pre-boil the gnocchi. They cook in the cream and that's where they pick up flavour.
  • The pan needs to be wide. A deep saucepan steams the gnocchi rather than baking the top.
  • If the breadcrumbs aren't browning, switch the grill on for the last 2 minutes. Watch it like a hawk.
