Smoked salmon Christmas wreath platter

The Christmas Eve set piece. Arrange the canapés as a wreath on a round platter, herbs and pomegranate seeds as decoration, a small bowl of horseradish crème fraîche in the centre for dipping. Builds the same way as a flat blini platter, just on a round board. Looks twice as good and costs the same. Three hundred photographs at the table will be taken before anyone eats anything.

Ingredients

  • For the canapé base:
  • 30 small blinis (or small rye toasts)
  • 400g WOH sliced smoked salmon, folded into 30 small roses
  • 250g full-fat crème fraîche
  • 1 unwaxed lemon, zested
  • 1 large bunch fresh dill, fronds picked
  • 1 pomegranate, seeds only (around 100g)
  • 30 baby capers, drained
  • Freshly ground black pepper
  • For the horseradish dip (centre bowl):
  • 200g full-fat crème fraîche
  • 1 tbsp creamed horseradish
  • 1 tbsp lemon juice
  • A pinch of salt

Method

  1. Whisk the dip ingredients together in a small bowl. Cover and chill.

  2. Find your biggest round platter or board. A cake stand also works.

  3. Arrange the blinis in a wreath shape around the rim of the platter, leaving the centre empty for the dip bowl.

  4. Top each blini with half a teaspoon of crème fraîche.

  5. Place a salmon rose on top of each.

  6. Tuck dill fronds between the canapés so the wreath looks "green".

  7. Scatter pomegranate seeds and capers across the wreath, like Christmas decorations.

  8. Set the horseradish dip bowl in the empty centre.

  9. Final crack of black pepper across the whole platter. Pinch of lemon zest.

Tips from our kitchen

  • Build the wreath on a flat round board with a rim. Easier to carry to the table.
  • Pomegranate seeds are best fresh on the day. They go dull after a few hours.
  • Make 30 percent more salmon roses than you think you need. Three will get eaten while you're building.
