Most smoked salmon dishes don’t take to the freezer well. Cured fish goes spongy when defrosted, cream sauces split, fresh herbs collapse to nothing. These few do work. Smoked salmon pinwheels freeze well rolled, defrost in the fridge overnight, and slice cleanly. Fishcakes freeze raw, panko-crumbed and shaped on a tray, and go straight from frozen to a hot pan with five extra minutes. The freezer is the answer to last-minute lunches, unannounced visitors and the times you bought too much salmon.
