Canapés

A good canapé is a small piece of theatre: one bite, one flavour, one decisive note. Our smoked salmon canapés are the ones we put out at Christmas, at engagement parties, at the Christmas Eve dinner before everyone sits down. Blinis with crème fraîche and dill. Pinwheels made the night before. Vol-au-vents filled at the last minute. Cucumber bites for the summer garden. None of them takes more than twenty minutes of standing time. Most can be built ahead and finished as guests arrive. All built on oak-smoked organic salmon.
