A grazing board is the easy answer to the question, “what do I bring to the garden party”. Build it around a generous side of oak-smoked salmon and surround it with the supporting cast: a couple of Irish farmhouse cheeses, a good loaf of brown soda bread, a bowl of salted butter, some sharp pickles, something fresh, something sweet. It looks like you spent the afternoon on it. It takes twenty minutes. The trick is balance and a big enough board.

Ingredients

  • 400g WOH sliced smoked salmon
  • 150g Irish farmhouse cheddar, in slices
  • 150g soft Irish cheese (Cooleeney, Wicklow Bán, or similar)
  • 1 small loaf brown soda bread
  • 1 small packet oatcakes
  • 100g salted Irish butter, softened
  • 6 fresh figs, halved
  • 2 tbsp baby capers, drained
  • 1 small jar cornichons or pickled cucumbers
  • 1 small jar Irish honey
  • 100g mixed olives
  • 2 lemons, halved
  • A handful of fresh dill, fronds picked
  • Freshly ground black pepper

Method

  1. Find your biggest flat board or platter. A wooden cake board works if you don't have one.

  2. Place the cheeses and butter in their final positions first, with knives. They anchor the board.

  3. Fold the smoked salmon loosely into ribbons or rosettes and pile in the centre. Resist flattening it. Volume reads better than a single layer.

  4. Cube the soda bread roughly. Arrange around the salmon along with the oatcakes.

  5. Tuck in the figs, olives, cornichons, and lemon halves. Aim for density, not symmetry. Empty space looks like a mistake.

  6. Set small bowls for the capers and honey. Scatter the dill fronds over the salmon. Final crack of black pepper.

Tips from our kitchen

  • Build on something flat that fits in your boot. A cake board is perfect.
  • Take the cheeses out of the fridge an hour before serving. Cold cheese tastes like nothing.
  • If you're transporting, cover with baking paper rather than cling film. It breathes and doesn't sweat.
