How Long Does Smoked Salmon Last? A Straight Answer

Unopened and kept properly chilled, smoked salmon lasts up to the use-by date printed on the pack, which for a vacuum-sealed side is usually a couple of weeks. Once you open it, that date no longer applies. Eat opened smoked salmon within a few days, wrapped tightly and kept in the coldest part of the fridge, and check your own pack, because the label is the authority, not us and not a blog.

That is the short version. As the people doing the smoking, we can tell you why those numbers are what they are, and why the moment you break the seal changes everything.

The one-line answer

Smoked salmon is a preserved food, not an immortal one. Salt and oak smoke slow spoilage down, which is why a vacuum-packed side can sit in the fridge for a fortnight where a fresh fillet would be gone in two or three days. What the cure does not do is stop the clock. It just runs it slower. The seal, the temperature and the date on the pack are the three things that decide how long you have.

Unopened: the use-by date is the rule

While the pack is sealed and chilled, the use-by date is the number that matters. For vacuum-packed cold-smoked salmon that date is commonly around two weeks from packing, though it varies by producer, cut and how the fish was handled before it reached you. Our own packs keep it simple: the use-by date is printed on the label of every pack, and the storage instruction is 0 to 4°C. The number to trust is the one on the salmon in your fridge.

A use-by date is a safety instruction, not a suggestion. It assumes the pack has been kept at the right temperature the whole way, which in Ireland means 5°C or below (our own packs specify 0 to 4°C). Leave a sealed pack out on the counter for an afternoon and the printed date stops meaning what it says, because the bacteria the cold was holding back have had a warm few hours to get going.

Once opened: the clock speeds up

The vacuum seal is doing quiet work. It keeps oxygen out, which slows the bacteria and the fats that would otherwise turn. Break the seal and you let the air in, so the printed use-by date no longer holds. From that point, treat opened smoked salmon as a few-days food: eat it within three days, kept cold and well wrapped. That three-day line is exactly what our own packs instruct. Other producers’ labels may give their own “once opened, consume within” line, and if they do, follow it over any general rule.

“Once opened” is the single most searched part of this question, and the honest answer is short. Wrap it tight, keep it cold, eat it soon. Air and time are what age smoked salmon once the seal is gone, and no amount of careful wrapping fully replaces the vacuum.

Cold-smoked and hot-smoked keep differently

The two products behave differently in the fridge because they are made differently. Cold-smoked salmon, the silky translucent kind, is cured and smoked below about 30°C. It is preserved rather than cooked, which is exactly why it keeps as long as it does sealed. Hot-smoked salmon is cooked through by the heat of the smoke, flaky and opaque. It is still a chilled product with a use-by date, and once opened it wants eating within a few days too. The forms overlap more than people expect. Both rely on the cold chain, and both lose their sealed shelf life the moment you open them.

How to store it so it lasts

Storage is where most of the shelf life is won or lost. A few things make the difference.

  • Keep it at 5°C or below. The coldest part of a home fridge is usually the bottom shelf at the back, not the door. The door is the warmest spot and the worst place for it.
  • Keep the seal until you need it. An unopened vacuum pack is doing its job. Do not open it “to let it breathe” days ahead.
  • Rewrap tightly after opening. Press cling film or a tight lid against the surface of the fish so there is little air touching it. Loose wrapping dries the edges and speeds things along.
  • Do not leave it sitting out. Bring out only what you are about to serve. Cold-smoked salmon eats best after ten minutes out of the fridge, but the rest of the pack belongs back in the cold.

How to tell if it has turned

Your senses are a fair guide, with one caveat: some spoilage is invisible, which is why the use-by date exists at all. Fresh smoked salmon smells faintly of oak and clean sea. When it turns, you will usually notice one of these:

  • A sour, sharp or ammonia-like smell rather than a clean smoky one.
  • A dull, greyish or faded look where there was a bright even sheen.
  • A sticky or slimy film on the surface.

Any of those and it goes in the bin, not on the plate. When in doubt, and the pack is past its use-by date, throw it out. Smoked salmon is not cheap, and it is tempting to push a day or two past. The reason we do not recommend it is that the bacterium that matters most here, listeria, can grow slowly even at fridge temperatures and does not always announce itself by smell.

Use-by versus best-before

The two dates mean different things and it is worth getting right. A use-by date is about safety. Do not eat the food after it, even if it looks fine. Most chilled smoked salmon carries a use-by date for this reason. A best-before date is about quality: the food may be past its best after it but is not necessarily unsafe. If your pack shows a best-before, treat the freshness and storage advice above as your real guide. If it shows a use-by, that date is a hard stop while the pack is sealed.
