This meticulous process ensures that only the finest cuts make it to their smokehouses.

Natural Sea Salt Cure:

  • The salmon undergoes a natural sea salt cure.
  • This traditional method enhances flavour and preserves the fish, paying homage to the past.

Eight-Hour Smoking:

  • After curing, each fish is smoked for a precise eight hours.
  • The secret lies in the use of pure oak chippings for smoking—the very essence that imparts the world-renowned flavor to their products.
